Instead of the usual refined flour and sugar, these cookies are made with hearty oats and whole wheat flour, giving them a beautiful rustic texture and added goodness.   2. 1️⃣ Prepare oat flour
  3. Pulse rolled oats in a mixer until lightly powdered (not super fine). Measure 60 g after grinding.
  4. 2️⃣ Mix dry ingredients
  5. In a bowl, whisk together:
  6. Oat flour
  7. Whole wheat flour
  8. Cocoa powder
  9. Baking soda
  10. Salt
  11. Set aside.
  12. 3️⃣ Cream ghee & jaggery
  13. In another bowl:
  14. Add ghee + jaggery powder
  15. Whisk or beat for 2–3 minutes until light, fluffy, and well combined
  16. This step is important for soft cookies.
  17. 4️⃣ Add wet ingredients
  18. To the ghee–jaggery mixture, add:
  19. Yogurt
  20. Vanilla extract
  21. Lemon juice
  22. Red gel food colour
  23. Mix well until evenly coloured.
  24. 💡 Add colour before flour so it distributes evenly.
  25. 5️⃣ Combine
  26. Add dry ingredients to wet.
  27. Mix gently.
  28. Add milk 1 tbsp at a time to form a soft, slightly sticky cookie dough.
  29. Fold in chocolate.
  30. 6️⃣ Chill the dough
  31. Cover and refrigerate for 20–30 minutes.
  32. This prevents spreading and improves texture.
  33. 7️⃣ Shape & bake
  34. Preheat oven to 170°C.
  35. Line a baking tray.
  36. Scoop and weigh 65 gm dough, roll lightly, place on tray.
  37. Gently flatten (cookies won’t spread much).
  38. Bake for -12- 15 minutes
  39. ✔ Edges set
  40. ✔ Centres still soft
  41. 8️⃣ Cool & set
  42. Let cookies rest on tray for 5 minutes.
  43. Transfer to a rack to cool fully.
  44. They firm up as they cool but stay chewy inside
