Easy Cinnamon Cookies

I remember as a child eating cinnamon cookies that my granny made, they were just out of this world. I hunted for her recipe for years till one day as I rummaged through my granny’s old cupboard which had been sent to the attic I discovered her recipe diary. The diary I had been looking for years. As I sifted through the diary I found interesting recipes and at last, a handwritten note in my granny’s diary, a yellow piece of paper with the recipe for cinnamon cookies scribbled on it. I don’t know who this recipe belongs to but in case you know let me know I would mention the rightful brilliant baker.

These easy cinnamon cookies are a delightful treat, perfect for any occasion. Soft on the inside with a slight crunch on the outside, they’re infused with warm cinnamon spice that makes every bite comforting and delicious. These cookies come together quickly with simple pantry ingredients, making them ideal for last-minute cravings or cozy baking days. Enjoy them with a cup of tea or coffee or just on their own as a sweet snack!

Understanding the Ingredients in Easy Cinnamon Cookies

Each ingredient in this recipe plays a vital role in creating the perfect balance of flavor, texture, and structure. Let’s take a closer look at why they’re essential:

  • Soft Margarine (170g): Margarine provides the cookies with richness and moisture, ensuring a tender texture. Its soft consistency makes it easy to mix, creating a smooth and creamy dough.
  • Light Brown Sugar (170g): This sugar adds a deep caramel-like sweetness with a hint of molasses, enhancing the warmth of the cinnamon. It also helps keep the cookies soft and slightly chewy.
  • Egg (1): The egg acts as a binding agent, holding the ingredients together while contributing to the structure and slight rise of the cookies. It also adds moisture, preventing them from becoming too dry.
  • Plain Flour (285g): Flour is the foundation of the cookies, providing structure and stability. It ensures the cookies hold their shape while baking without spreading too much.
  • Ground Cinnamon (2 teaspoons): The star of the recipe, cinnamon brings a warm, fragrant spice that pairs beautifully with the sweetness of the sugar, giving the cookies their signature flavor.
  • Rolled Oats (55g): Oats add a delightful texture to the cookies, giving them a slight chewiness and a wholesome, rustic feel. They also enhance the overall flavor, complementing the cinnamon perfectly.
  • Brown Sugar (55g): This extra addition of brown sugar adds another layer of sweetness and depth, ensuring a perfectly balanced cookie with just the right amount of chew.
  • Ground Cinnamon (½ teaspoon – for coating): A light dusting of cinnamon enhances the aroma and taste, creating a deliciously spiced outer layer that makes these cookies even more irresistible.

Each of these ingredients works together to create a batch of warm, spiced, and comforting cinnamon cookies that are perfect for any occasion.
