What Is a Bakery-Style Chunky Chocolate Chip Cookie?

A bakery-style chunky chocolate chip cookie is a thick, oversized cookie with a soft and chewy center, crisp edges, and generous chunks of chocolate. These cookies are inspired by the ones you’d find in artisan bakeries—big, bold, and irresistibly rich in flavor. Unlike regular homemade cookies, bakery-style cookies have a carefully balanced texture, often achieved by chilling the dough, using high-quality ingredients, and baking at the right temperature for a perfect contrast between crispy and gooey.

What Makes a Cookie “Bakery-Style”?

A bakery-style cookie has several key characteristics that make it different from a standard homemade cookie:

  1. Thick & Chunky – They are larger and have a thick, substantial bite.
  2. Crisp Edges & Soft Centers – Perfectly baked for a golden crust while keeping the inside chewy.
  3. High-Quality Ingredients – Often made with premium chocolate and real butter.
  4. Chunks Over Chips – Bakery-style cookies often use chopped chocolate instead of regular chocolate chips for melty pools of goodness.
  5. Deep Flavor – I used brown sugar for chewiness and depth of flavor, with a hint of kosher salt for balance.

Ingredients

Instructions

  1. Preheat & Prepare – Preheat the oven to 170°C (340°F). Line a baking tray with parchment paper.
Mix Dry Ingredients – In a medium bowl, whisk together flour, baking powder, baking soda, cornstarch, milk powder, and salt. Set aside.
Cream Butter & Sugars – In a large bowl, beat the softened butter, dark brown sugar, and caster sugar until light and fluffy.
Add Wet Ingredients – Mix in the egg and vanilla extract until fully incorporated.
Combine Dry & Wet – Gradually fold the dry ingredients into the wet mixture until a soft dough forms. Do not overmix.
Fold in Chocolate – Stir in the chocolate chunks evenly.
Portion & Shape – Scoop the dough onto the prepared baking tray, spacing them about 2 inches apart.
Bake – Bake for 12-15 minutes, or until the edges are golden brown and the centers are slightly soft.
Cool & Enjoy – Let the cookies rest on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  2. Notes: 1) The T (capital T ) stands for tablespoon. 2) The t (small t) stands for teaspoon. 3) Use good quality dark chocolate with 55% cocoa solids or 70 % cocoa solids. 4) Don’t omit the cornflour or the milk powder.

Enjoy your homemade Chocolate Chunk Cookies while they’re warm and gooey! Pair them with a glass of milk or your favorite coffee for the ultimate indulgence. Store any leftovers in an airtight container to keep them fresh for two days. Happy baking! 😊🍪
