Cold coconut cream and whipping cream whip up better and hold their shape longer—especially important if you’re assembling ahead of time. It is important that you chill your coconut cream overnight in the fridge. You need the thick creamy part of the coconut cream not the watery milk. Once you have chilled the coconut cream take the can out don’t shake it and open it and scoop out the thick creamy part. Its a good idea to keep the bowl, the whisk of the hand mixer and the whipping cream chilled. The marshmallow fluff should be fluffy too so give it a little whisk before you add it to the coconut cream mixture. The Dont over whip as it can make this fluffy mix flat.

Go for mangoes that are sweet, juicy, and slightly soft to the touch. Alphonso or Kesar varieties work beautifully for their richness and aroma. Though sweet and tart mangoes work well too.
