This dough is not easy to work with however once chilled it will do well. Roll the dough on a silicon mat lightly floured with buckwheat flour, roll it thick 1/2 cm and then cut out the cookies make 8 of these without the hole in the center and 8 with holes in the center which were made by a round icing tip. One can skip the step and make cookies without the holes in the center. But they look pretty with the Jaggery Caramel Sauce peeking out.
