Each ingredient in your Chocolate Malt Fudge Filling plays a crucial role in texture, flavor, and structure. Here’s why they are essential:

Dry Ingredients:

  1. Caster Sugar – Provides sweetness and helps caramelize slightly for a smooth texture.
  2. Brown Sugar – Adds moisture, a deeper sweetness, and a slight caramel-molasses flavor that complements malt.
  3. Cocoa Powder – Gives a deep, rich chocolate flavor without adding extra moisture.
  4. Cornstarch – Acts as a thickener, helping create a smooth, pudding-like consistency in the filling.
  5. All-purpose flour – Adds additional structure and stability to prevent the filling from being too runny.
  6. Malt Powder – The key ingredient for a nostalgic, caramelized, slightly nutty malted flavor.
  7. Salt (Pinch) – Enhances all the flavors, balancing sweetness and intensifying the chocolate notes.

Wet Ingredients:

  1. Milk – The base liquid that hydrates the dry ingredients and ensures a creamy consistency.
  2. Heavy Cream – Adds richness and a silky texture, making the filling extra indulgent.

Final Ingredients:

  1. Dark Chocolate – Melts into the filling, giving it a luxurious, fudgy texture and an intense chocolate flavor.
  2. Butter – Adds richness, shine, and a smooth mouthfeel. It also helps the filling set well.
  3. Vanilla Extract – Rounds out the flavors and enhances the overall depth of the chocolate-malt combination.

Why Do We Need Them Together?

  • The sugars, cocoa powder, and malt powder develop deep, complex flavors.
  • The cornstarch and flour thicken the filling to ensure it sets properly.
  • The milk and cream create a luscious, creamy consistency.
  • The chocolate and butter add silkiness and a fudge-like texture.
  • The vanilla and salt enhance and balance the flavors.

Each ingredient has a purpose—without one, the texture or taste could change!
