    1. Prepare the Oven & Dish
    Preheat oven to 170°C.
    Grease a 6–7 inch baking dish or 4–5 small ramekins.

    2. Make the Pudding Batter
    Dry Ingredients
    In a large mixing bowl, add:
    ½ cup ragi flour
    ½ cup oats flour
    ½ cup cocoa powder
    ¾ cup jaggery powder
    1 tsp baking powder
    1/2 tsp baking soda
    Whisk everything well to remove lumps.
    Wet Ingredients
    In another bowl, mix:
    1 cup milk
    5 tbsp melted ghee
    Add 1 tbsp vinegar to the milk → let sit for 1 minute to curdle (makes pudding soft).
    Pour the wet ingredients into the dry ingredients.
    Mix gently until a smooth, thick batter forms.
    Do not overmix.
    Pour this batter into the prepared baking dish and level the top.

    3. Add the Self-Saucing Topping (Do NOT mix)
    Topping Sauce Dry Layer
    In a small bowl, mix:
    3½ tbsp jaggery powder
    ¼ cup cocoa powder
    Sprinkle this mixture evenly over the batter.
    Hot Water Layer
    Slowly pour 1½ cups boiling water over the surface.
    Pour using the back of a spoon so it doesn’t disturb the batter.
    Do not stir at all.
    The water will sink and turn into molten sauce underneath during baking.

    4. Bake
    Place in the oven and bake at 170°C for 25–35 minutes.
    Top should look set and cracked.
    Bottom will be saucy and molten.
    Let it rest for 5 minutes before serving (sauce thickens slightly).

    5. Serve
    Scoop deep to get cake + molten chocolate sauce in every serving.
    Serve warm with:
    A scoop of ice cream
    Chocolate chips sprinkled on top
    A drizzle of melted chocolate (optional)
