Mine calls for chocolate.
My birthday is on the 18th of February, and this year I didn’t want a bakery cake loaded with refined sugar and regret. I wanted something dramatic. Something indulgent. Something that makes you close your eyes after the first bite. But I also wanted it to be made with ingredients that love you back.
So I baked the Ultimate Eggless Fudgy Cake.
This is not a light, airy sponge. This is dense. Glossy. Deeply chocolatey. The kind of cake that sinks under your fork and melts slowly, unapologetically. The kind of cake that feels like a celebration even before you light the candles.

- Method (Extra Fudgy Technique)
1️⃣ Prep
Preheat oven to 170°C.
Line two 8-inch pans OR bake one tall cake and slice later.
2️⃣ Chocolate Bloom Step (Important for Fudginess)
In warm milk, dissolve:
Coffee powder
Cocoa powder
Let sit 2–3 minutes.
This deepens chocolate flavor dramatically.
Add melted dark chocolate. Mix smooth.
3️⃣ Make the Base
Whisk:
Melted ghee + jaggery until glossy
Add yogurt and whisk until creamy.
Pour in chocolate mixture + vanilla. Mix well.
4️⃣ Combine
Sift dry ingredients.
Fold gently into wet mixture.
Do NOT overmix.
Batter should be thick and luscious.
If too thick → add 1–2 tbsp warm milk.
5️⃣ Bake
Bake 30–38 minutes.
🔑 Remove when:
Top is set
Center has moist crumbs (not dry)
Do NOT overbake. Slight underbake = fudgy texture.
Cool completely. Refrigerate 1 hour before layering (helps clean slicing).
