  2. Prepare the Date Paste
  3. Heat the milk until it just comes to a boil.
  4. Add 100 g dates, switch off the heat, cover, and let rest for 15–20 minutes.
  5. Add ghee and blend into a smooth, thick paste.
  6. Make the Pudding Batter
  7. In a mixing bowl, whisk together ragi flour, oat flour, cinnamon, ginger, baking powder, and baking soda.
  8. Add the date paste and gently fold until smooth.
  9. If the batter is very thick, add 15–30 ml water to loosen slightly.
  10. Bake or Steam
  11. Pour batter into a greased 18 cm (7-inch) pan or ramekins.
  12. Bake:
  13. At 180°C for 25–30 minutes, until a skewer comes out clean.
  14. Steam:
  15. Steam covered for 30–35 minutes, until firm and spongy.
  16. Sticky Date–Jaggery Topping
  17. In a saucepan, add jaggery, chopped dates, and water. Cook on low heat until melted and thickened.
  18. Add ghee and cream, stirring continuously until smooth and glossy.
  19. Simmer for 2–3 minutes and remove from heat.
  20. To Serve
  21. Pour the warm sticky topping generously over the hot pudding, allowing it to soak in. Serve plain or with vanilla ice cream or warm custard.
