Instructions for eggless brownies

  1. Method
    Preheat the oven to 175 degrees C. Line and grease a pie pan. Melt the butter and chocolate in a medium microwave bowl or in a saucepan set over low heat. Add the condensed milk, vanilla essence, and the sugar. Mix it well. Now, add the dry ingredients Flour, coco powder, and a pinch of salt to the wet mix. Now, stir it well until all the flour has been incorporated. Spoon the batter into the prepared pan and bake for 20 to 25 minutes until the brownies feel firm to the touch. Remove from the oven and cool on a wire rack. Let the brownie cool completely in the pie pan before you add the cooled pudding.
    I used 45 percent coco solid coverture chocolate.
    The butter I used was salted.
    Brown Sugar preferably Dark brown or you can use dark muscovado.
    Use only sweetened Condensed Milk.
    Can add 40 gm of dark chocolate chips if desired.

  3. Take a saucepan and add the milk and cream to it. Heat on low heat. Take out 1/2 a cup of this and add coco powder, cornflour, coffee, and sugar. Mix this slurry really well. Chop your dark chocolate into small pieces. Now add this chocolate to the milk and cream that is heating. mix till the chocolate melts and then add the slurry, keep stirring till the pudding becomes nice and thick (this might take a while). You can increase the heat if you want the pudding to go thicker quickly but remember to keep stirring the pudding or it might catch at the bottom. Now take the pudding off the heat and add the butter and vanilla stir well. Take a piece of cling film and place it on top of the pudding, we do this so that the pudding doesn’t form a skin. Let the pudding cool

  5. Whip the cream with the sugar till stiff peaks.

  7. Now for the assembly of this pudding pie, you need to take the cooled brownie pie pan out and pour the eggless chocolate pudding on it. spread it well and then add dollops of the whipped cream. Garnish with chocolate curls, chocolate shaving, or whatever your heart desires. enjoy!
