I baked this cake a long time back but baked it again on my aunt’s birthday. This cake is the best carrot cake you will ever make, it’s easy to put together and way more delicious than the shop-bought ones. I love this cake for its simplicity and deliciousness. Honestly, this cake is a dream to eat, with a light sponge and a decadent cream cheese frosting, it is the best cake to make. The best part it’s simple to put together. The spices enhance the flavor of the cake and make the cake unique.

Ingredients

  • Cream Cheese Frosting

Instructions

  1. Preheat oven 350 °F, Line and butter two 7′ inches cake tins. Making sure that the bottom of the tins are lined with a buttered baking paper.
  2. Take the first 6 ingredients which are the dry ingredients , mix them well. Now take the orange zest and rub it in the dry ingredients for a few seconds. Keep it aside
  3. Take oil and add the sugar and eggs into it and whisk it really well. Add the carrots and the walnuts , raisins and vanilla essence. Mix it well.
  4. Now mix the dry with the wet ingredients and whisk till there are no traces of flour that can be seen, Dont over do the whisking, just whisk till everything is well incorporated.
  5. Divide batter into two small cake tins and bake till a skewer poked in comes out clean.
  6. Cream Cheese Frosting

  7. Take your room temperature cream cheese whisk it well with a hand mixer and then add the butter, beat till light and fluffy.  Now add the sugar a little at a time till you have a nice fluffy icing add the vanilla and the salt. Mix it well and then frost the cake with it.

  9. Do not try icing this cake while the cake is hot you will just be greeted with pools of melted cream cheese frosting , so just wait till the cakes have cooled down completely. Now place the cake on a cake board or a cake stand and cut one cake from the middle and frost it with the cream cheese frosting, cut the second cake from the middle and build your cake , frosting the center as well as the sides. Once you have built your cake decorate it with walnuts and keep it refrigerated for at least 2 hours before you dig into it. Enjoy !
